Zucchini is a great vegetable to incorporate in your diet.

I have a lot of recipes for it, from breakfast to desert!

Breakfast casserole

Ingredients:

  1. 2 small zucchini: grate it and squeez out the liquid
  2. 1 onion, chopped
  3. 1 carrot,
  4. 3 eggs
  5. 1/2 – 1 cup grated cheese
  6. 1/2 tsp nutmeg

Mix everything, put in a baking dish and bake at 380 F for about 30 min.

Savory turkey “muffins” for lunch

Ingredients:

  1. 2 small zucchini: grate it and squeez out the liquid
  2. 1 onion, chopped
  3. 1 lb ground turkey (or chicken, or beef)
  4. 2 eggs
  5. 1/2 cup grated cheese
  6. 1/2 cup green onions

Mix everything, put in the muffin tins and bake at 380 F for about 30 min.

These muffins taste great and you can easily put them in a container and enjoy cold for lunch.

Zucchini brownies

Ingredients:

  1. 1 lb grated zucchini (squeeze out the liquid)
  2. 4 eggs
  3. 1/2 cup sugar
  4. 1/4 cup vegetable oil
  5. 1 cup wholemeal flour
  6. 1/2 cup cacao powder
  7. 1/2 tsp salt

Again, just mix it together and bake at 350 F for 30-40 min, depending on how moist do you want it to be.
